Appearance: Salmon pink / A light blush

Aromas: Sweet peach and fresh raspberry, some crisp apple with a hint of litchi, floral jasmine, rose petal and cinnamon

Flavours: Crisp apple (Pink Lady), Turkish delight, Elderflower, sour cherry and sweet pineapple

Structure: The wine has a refreshing acidity, a soft texture and medium body.

Finish: Tingly and tart, soft and smooth, or fresh and juicy. The finish is long and refreshing with a distinct and delicious tang.

It all begins with the most important step: selecting the perfect grape. In our case, that's two. We use Merlot for its bright berry vibrancy, its ability to age well, and its thin skin which imparts a small amount of colour. We also use lesser amounts of the South African Pinotage grape to add tones of dark, and tropical fruits.

We then gently press the grapes so as not to extract too much colour from the skins. 24hrs later, a yeast culture is added that will enhance the fruity bouquet of the wine.

Our fermentation is done slowly and patiently, at a low temperature to lock in the delicate fruit aromatics which fermentation produces. In three weeks, the yeast will have consumed and converted all the sugar into alcohol.

Finally, we have our wine. But don’t reach for your glass just yet. At this point, we begin the process of removing some of the alcohol. Firstly, we distil, capture, and store the aromatics of the wine. The alcohol is then removed, and the aromatics returned – now enhanced by the alcohol's removal.

Crisp and vibrant, the wine is now ready to be chilled and generously shared.
